Quinoa and Vegetable Chili

Ok guys, I'm calling this a chili but I'm not really sure if it qualifies as a chili, because it has no beans. I'm just not sure what else to call it... besides delicious! Mmm mmm mmm. Seriously, this meal is so satisfying.

I made this "chili" meatless and on the milder side (for the kiddos) and it was very flavorful and filling, but meat can be added if that is your preference. Add a little cayenne pepper if you like it on the spicy side!


1 onion diced

2 carrots diced

2 bell peppers of any color diced

1 jalapeno diced

28 0z can whole tomatoes in sauce

½ cup uncooked quinoa

1 cup vegetable or chicken broth

2 tsp chili powder

2 tsp cumin

1 tsp salt

1 tsp pepper

2 tsp avocado oil

Sliced avocado

Sour cream


1. Heat avocado oil in large pot. Add veggies and saute for 5 minutes over medium-high heat.

2.Add broth, tomatoes, seasoning, and quinoa. Bring to a boil and simmer covered for 15 minutes or until quinoa is cooked through.

3.Taste and adjust seasonings.

4.Serve with avocado, sour cream, and cracked pepper.

As always, be sure to choose organic and farm fresh ingredients whenever possible to keep this meal clean!
