Mediterranean Sweet Potato Fries

This recipe is quick, easy, and unbelievably delish! The original recipe came from Taste of Yum but I modified it a bit. Ingredients can easily be swapped out to make this recipe vegan(almond, coconut, or cashew milk yogurt for the tzatziki base and sheep cheese feta rather than cow's milk). Packed with protein and veggies for a completely satisfying meal or works great as a party appetizer!
Ingredients :
Tzatziki :
* 1 cup plain yogurt
*Half a cucumber grated
*1/4 cup chopped parsley
*Juice of 1/2 a lemon
*Salt and pepper to taste
Marinated tomatoes and chickpeas :
*1 can chickpeas, rinsed and drained
*3 tomatoes, diced
*2 tablespoons olive oil
*1 clove garlic
*1/4 cup chopped parsley
*Juice of 1/2 a lemon
*Salt and pepper to taste
Other ingredients :
*1 bag sweet potato fries
*1 head romaine lettuce
*Feta cheese
*Chopped kalamata olives
*Diced cucumbers
*Pita chips
Directions :
1. Prepare tzatziki by mixing ingredients. Allow half an hour to chill in refrigerator to blend flavors.
2. Prepare sweet potato fries to package directions.
3. Toss ingredients together to marinate chickpeas and tomatoes
4. Top fries with all ingredients when cooked. Serve with pita chips on the side for extra dipping.
